Ingredients
Peanut Butter Filling
- 1/2 cup creamy peanut butter
- 1/2 cup confectioners’ sugar
- 4-1/2 teaspoons butter, softened
- 1/2 teaspoon salt
Chocolate Coating
- 2 cups semisweet chocolate chips
- 4 milk chocolate candy bars (1.55 ounces each), coarsely chopped
- 1/2 cup creamy peanut butter (remaining)
Optional
- Colored sprinkles
Instructions
- Make the filling: Combine 1/2 cup creamy peanut butter, confectioners’ sugar, softened butter, and salt in a bowl. Stir until the mixture is smooth and well combined, creating the peanut butter filling.
- Melt the chocolate: In a microwave-safe bowl, combine semisweet chocolate chips, coarsely chopped milk chocolate candy bars, and the remaining 1/2 cup peanut butter. Microwave in short bursts, stirring frequently until the mixture is completely melted and smooth. Alternatively, melt with a double boiler or water bath if preferred.
- Assemble the cups: Line a mini muffin tin with paper liners. Drop teaspoonfuls of the melted chocolate mixture into each liner to form the base. Then add a scant teaspoon of the peanut butter filling on top of the chocolate layer inside each cup. Finally, top each cup with another teaspoonful of the melted chocolate mixture. If desired, sprinkle colored sprinkles on top for decoration.
- Chill until set: Place the assembled peanut butter cups in the refrigerator. Chill until the chocolate is firm and the cups are fully set, typically about 15-20 minutes. Once set, store the cups in an airtight container to maintain freshness.
Notes
- Use mini muffin tins for bite-sized cups or larger muffin liners for bigger peanut butter cups.
- Microwave melting is convenient but a double boiler or water bath method prevents burning and ensures smooth texture.
- Keeps well in the refrigerator for up to a week in an airtight container.
- Sprinkles add festive color but can be omitted if preferred.
