These fun and festive Peeps Cookies combine a classic sugar cookie dough with gooey marshmallow Peeps and white chocolate chips. Packed with sprinkles both inside and out, these cookies are a perfect Easter or springtime treat, delivering a delightful combination of textures and flavors in every bite. The recipe yields 10 large, soft, and chewy cookies with a playful marshmallow center peeking through, perfect for sharing with friends and family.

Ingredients

Cookie Dough

  • 1 cup unsalted butter (softened at room temperature)
  • 1½ cups superfine granulated sugar (or caster sugar)
  • 2 large eggs (ideally at room temperature)
  • 1½ tsp vanilla extract
  • 2½ cups all purpose flour (or plain flour)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 12 oz white chocolate chips (or solid white chocolate chopped into small chunks)
  • ½ cup sprinkles (divided – half for mixing into the dough and half for coating)

Filling and Coating

  • 10 Peeps marshmallow candies (any color or shape)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C/155°C Fan) with a cookie sheet pan inside to get it hot and ready for baking.
  2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and superfine sugar together with a hand mixer until the mixture is light and fluffy, about 2 minutes.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract until fully combined.
  4. Sift Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt, then add them to the wet ingredients.
  5. Mix Dough: Using a spatula, gently stir the mixture until a thick sugar cookie dough forms.
  6. Add White Chocolate and Sprinkles: Fold in the white chocolate chips and half of the sprinkles, making sure they are evenly distributed throughout the dough.
  7. Form Dough Balls: Using an OXO #40 scoop (approximately 1½ tablespoons), scoop out 3 portions per cookie to form 10 large dough balls (about 4½ tablespoons each). Place them on parchment paper.
  8. Assemble Cookies with Peeps: With lightly dampened hands, flatten a dough ball, place a whole Peep in the center, then carefully wrap the dough around the Peep leaving the marshmallow peeking through a small hole. Dip the exposed dough edges around the hole into the remaining sprinkles to coat.
  9. Prepare Baking Sheet: Carefully remove the preheated cookie sheet from the oven, line it with parchment paper, and place a few cookies spaced well apart on the tray.
  10. Bake Cookies: Bake for 13 minutes or until the edges just begin to turn golden.
  11. Shape Cookies: Remove cookies from the oven and use a bowl or a large round cookie cutter to gently press around the cookies’ edges to make them neatly rounded.
  12. Cool and Repeat: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Return the cookie sheet to the oven to warm and continue baking remaining dough balls in batches.

Notes

  • Using parchment paper on your baking sheet helps prevent sticking and makes cleanup easier.
  • Lightly dampened hands help prevent the cookie dough from sticking when shaping around the Peeps.
  • Scooping three 1½ tablespoon portions per cookie ensures large, generous-sized cookies.
  • Warming the baking sheet between batches helps maintain consistent baking temperatures.
  • Allow cookies to cool well before handling to avoid breaking the soft cookie and melty center.
