Cookie Dough
- 1 cup unsalted butter (softened at room temperature)
- 1½ cups superfine granulated sugar (or caster sugar)
- 2 large eggs (ideally at room temperature)
- 1½ tsp vanilla extract
- 2½ cups all purpose flour (or plain flour)
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 12 oz white chocolate chips (or solid white chocolate chopped into small chunks)
- ½ cup sprinkles (divided – half for mixing into the dough and half for coating)

- 10 Peeps marshmallow candies (any color or shape)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C/155°C Fan) with a cookie sheet pan inside to get it hot and ready for baking.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and superfine sugar together with a hand mixer until the mixture is light and fluffy, about 2 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time along with the vanilla extract until fully combined.
- Sift Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt, then add them to the wet ingredients.
- Mix Dough: Using a spatula, gently stir the mixture until a thick sugar cookie dough forms.
- Add White Chocolate and Sprinkles: Fold in the white chocolate chips and half of the sprinkles, making sure they are evenly distributed throughout the dough.
- Form Dough Balls: Using an OXO #40 scoop (approximately 1½ tablespoons), scoop out 3 portions per cookie to form 10 large dough balls (about 4½ tablespoons each). Place them on parchment paper.
- Assemble Cookies with Peeps: With lightly dampened hands, flatten a dough ball, place a whole Peep in the center, then carefully wrap the dough around the Peep leaving the marshmallow peeking through a small hole. Dip the exposed dough edges around the hole into the remaining sprinkles to coat.
- Prepare Baking Sheet: Carefully remove the preheated cookie sheet from the oven, line it with parchment paper, and place a few cookies spaced well apart on the tray.
- Bake Cookies: Bake for 13 minutes or until the edges just begin to turn golden.
- Shape Cookies: Remove cookies from the oven and use a bowl or a large round cookie cutter to gently press around the cookies’ edges to make them neatly rounded.
- Cool and Repeat: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Return the cookie sheet to the oven to warm and continue baking remaining dough balls in batches.
