- Mix Wet Ingredients: In a large mixing bowl, whisk together the melted unsalted butter, vanilla extract, and granulated sugar until the mixture is smooth and well combined.
- Add Eggs: Whisk in the two eggs one at a time, mixing just until incorporated to avoid overmixing.
- Incorporate Saffron and Raisins: Stir in the saffron-infused water along with the raisins to evenly distribute their flavor and texture.
- Form Dough: Gradually add the all-purpose flour to the wet ingredients, stirring gently until a soft dough forms. Avoid overmixing to keep the cookies tender.
- Portion Cookies: Using a teaspoon or small scoop, drop 1 to 2 teaspoonfuls of the dough onto a baking sheet lined with parchment paper or a silicone baking mat. Space the cookies about 2 inches apart as they will spread during baking.
