Description

This Plum Cake recipe offers a delightful combination of tender cake studded with juicy diced plums and topped with a crisp, buttery streusel. Perfect for breakfast, dessert, or anytime you crave a fruity, sweet treat with a hint of warm ginger and a crunchy topping.

Ingredients

Streusel Topping

  • 6 tablespoons brown sugar
  • 1/4 cup flour
  • 2 tablespoons cornmeal
  • 1/2 teaspoon ground ginger
  • Pinch of salt
  • 4 tablespoons cold butter, diced

Cake Batter

  • 5 small plums (10-11 ounces), diced with skins on
  • 4 tablespoons butter, melted
  • 2/3 cup granulated sugar
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons whole milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350-degrees F (175-degrees C) and lightly butter an 8-inch square baking dish to prevent sticking.
  2. Make the Streusel: In a small bowl, whisk together the brown sugar, flour, cornmeal, ground ginger, and a pinch of salt. Using your fingertips, incorporate the diced cold butter into the dry ingredients until the mixture becomes crumbly and evenly dispersed. Set aside this streusel topping.
  3. Prepare the Plums: Slice each plum in half and remove the pits. Then slice each half into 4 slices, followed by dicing each slice into 3-4 pieces, keeping the skins on. Set the diced plums aside.
  4. Mix Wet Ingredients: In a medium bowl, whisk together the melted butter, granulated sugar, egg whites, and vanilla extract until well combined.
  5. Add Dry Ingredients: Sprinkle the flour, baking powder, and salt evenly over the wet mixture. Gently stir to incorporate the dry ingredients lightly without overmixing.
  6. Add Plums and Milk: Fold in the diced plums carefully, then add the whole milk and stir gently until no streaks of flour remain, being careful not to overmix.
  7. Assemble and Add Streusel: Pour the batter into the prepared baking dish and sprinkle the streusel mixture evenly over the top to create a crunchy crust after baking.
  8. Bake the Cake: Bake in the preheated oven for 35-38 minutes or until the streusel is golden brown and a cake tester inserted into the center comes out mostly clean.
  9. Cool and Serve: Remove from oven, allow the cake to cool slightly, then cut into squares and serve warm or at room temperature.

Notes

  • Using plums with skins on adds texture and color to the cake.
  • Do not overmix the batter to keep the cake tender and light.
  • You can substitute whole milk with any milk of choice, but it may slightly alter the texture.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • The cake can be served with whipped cream or ice cream for an extra indulgent dessert.
