Delicious and protein-packed chocolate peanut butter cups made with natural ingredients, perfect for a healthy snack or dessert. These homemade treats combine creamy peanut butter, chocolate, and protein powder, offering a rich taste and satisfying texture.


Ingredients

Peanut Butter Filling

  • ½ cup peanut butter (runny/natural)
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil (melted)
  • ¼ cup vanilla protein powder (or unflavored protein powder)

Chocolate Coating

  • 2 cups chocolate chips
  • 1 tablespoon coconut oil

Topping

  • Flaky sea salt for topping


Instructions

  1. Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the peanut butter, maple syrup, melted coconut oil, and protein powder. Stir thoroughly until all ingredients are well incorporated. Place the mixture in the refrigerator for about 5 minutes to firm up slightly.
  2. Melt the Chocolate: In a microwave-safe bowl, add the chocolate chips and 1 tablespoon of coconut oil. Microwave on high in 20-second intervals, stirring well after each until the chocolate is completely melted and smooth.
  3. Coat the Moulds with Chocolate: Spoon 1 tablespoon of the melted chocolate into each cavity of a silicone muffin mould (or a metal muffin tray lined with cupcake liners for easy removal). Use a spoon to spread the chocolate up the sides to coat the moulds evenly. Place the moulds in the freezer for 10 minutes to harden the chocolate shell.
  4. Shape the Peanut Butter Balls: While the chocolate sets, roll the chilled peanut butter mixture into 12 evenly sized balls. Once the chocolate coating is firm, place each peanut butter ball into the center of the mould, gently pressing down to flatten slightly.
  5. Seal with More Chocolate: Cover each peanut butter filling with 1 tablespoon of the remaining melted chocolate. If the chocolate has hardened, gently reheat it in the microwave to soften. Return the moulds to the freezer for about 10 minutes to allow the candy to harden completely.
  6. Add Finishing Touches: Before serving, sprinkle flaky sea salt on top of each peanut butter cup for a delicious contrast of flavors. Remove from the moulds and enjoy!

  • If you don’t have a silicone muffin mould, use cupcake liners in a metal tray for easy removal.
