Ingredients

Batter:

  • 2 eggs
  • 1 cup all-purpose flour

For Frying:

  • 2 cups cooking oil

Instructions

  1. Prepare the batter: In a medium bowl, beat the eggs with a hand whisk or electric mixer. Add vanilla extract, granulated sugar, and milk, whisking until well combined.
  2. Add flour and salt: Gradually sift in the all-purpose flour and kosher salt, mixing thoroughly until the batter reaches a liquid consistency similar to heavy cream.
  3. Prepare the workspace: Line two cookie sheets with paper towels and set them aside next to the stove for draining fried cookies.
  4. Heat the oil: Pour the cooking oil into a deep pan and heat it over medium heat until hot but not smoking, suitable for frying delicate cookies.
  5. Dip the mold: Immerse the rosette iron mold into the hot oil first to heat it, then quickly dip it into the batter to coat it.
  6. Fry the cookies: Immediately place the batter-coated mold back into the hot oil. The batter will release from the mold and begin to fry. Fry the cookie on one side for 2-4 seconds, flip it carefully, and fry until both sides are golden brown. Use caution not to overcook.
