Ingredients
Brownie Layer
- 4 large eggs (room temperature)
- 2 cups granulated sugar
- 8 ounces unsalted butter, melted (+ 2 tablespoons for greasing the pan)
- 1 cup unsweetened cocoa powder (sifted)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (sifted)
- ½ teaspoon kosher salt
- 20 Oreos (whole)
Cheesecake Layer
- 16 oz. cream cheese (room temperature)
- ½ cup granulated sugar
- 1 egg (room temperature)
- 1 teaspoon vanilla extract
- 8 Oreos (chopped)
Chocolate Ganache and Garnish
- 10 ounces dark chocolate
- 4 Oreos (chopped)
- 10 mini Snickers candy bars (chopped)
Instructions
- Preheat: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the layered bars.
- Prepare the Pan: Line a 9×12 or 9×13-inch pan with parchment paper covering the bottom and two sides for easy removal. Butter the parchment paper or spray it with baking spray, then set aside.
- Make Brownie Batter: In the bowl of a mixer fitted with a wire whisk attachment, beat 4 room temperature eggs at medium speed until fluffy and light yellow. Add 2 cups sugar and beat until combined. Mix in melted butter, sifted cocoa powder, vanilla extract, sifted flour, and kosher salt until well combined.
- Assemble Brownie Layer: Pour the brownie batter into the prepared pan and evenly place 20 whole Oreos on top. Set aside.
- Prepare Cheesecake Mixture: In a separate bowl, beat together 16 oz. cream cheese, ½ cup sugar, 1 egg, and 1 teaspoon vanilla extract until smooth and well blended.
- Add Cheesecake Layer: Pour the cheesecake mixture over the Oreos in the pan, spreading evenly. Sprinkle chopped 8 Oreos on top of the cheesecake layer.
- Bake: Place the pan in the oven and bake at 350°F for 40 to 50 minutes. Rotate the pan halfway through baking. The cheesecake layer should be set, no longer jiggly in the center, and edges should be golden brown.
- Melt Chocolate Ganache: Fill a medium saucepan halfway with water and bring to a boil. Place a separate medium bowl with 10 ounces dark chocolate over the simmering water, ensuring the bowl’s bottom does not touch the water. Gently stir until chocolate melts completely.
- Top with Ganache: Remove the bowl from heat and spoon the melted chocolate evenly over the cheesecake layer.
- Garnish: Immediately sprinkle chopped 4 Oreos and chopped 10 mini Snickers over the ganache.
- Cool and Chill: Let the bars cool to room temperature, then refrigerate for at least 6 hours to set fully.
- Serve: Remove from fridge, lift the bars out using parchment paper, cut into 12 servings and enjoy your rich, layered dessert.
Notes
- For best results, use room temperature eggs and cream cheese to ensure smooth batter and cheesecake texture.
- Line the baking pan with parchment paper to easily remove the bars after baking and chilling.
- Rotate the pan halfway through baking to promote even cooking and avoid uneven browning.
- Allow the cheesecake layer to fully set before adding Ganache to prevent mixing layers.
- Refrigerate the bars for at least 6 hours or overnight for clean slicing and optimal flavor melding.
- Store leftovers in an airtight container in the fridge for up to 4 days.
