Ingredients

Fruit Syrups

  • 750 ml (3 1/4 cups minus 2 tbsp) orange juice (fresh or from concentrate)
  • 750 ml (3 1/4 cups minus 2 tbsp) pineapple juice (fresh or from concentrate)
  • 750 ml (3 1/4 cups minus 2 tbsp) cherry juice (fresh or from concentrate)
  • 750 ml (3 1/4 cups minus 2 tbsp) apple juice (fresh or from concentrate)
  • 200 g (1 cup) granulated sugar
  • Food colouring gel – green, red, and yellow (optional)

To Serve

  • Shaved ice (made by pulsing ice cubes or crushed ice in a food processor until finely crushed and fluffy)


Instructions

  1. Prepare Fruit Juices: Pour each fruit juice separately into individual saucepans. Add 50g (1/4 cup) of granulated sugar to each saucepan. Stir gently to combine the sugar and juice thoroughly.
  2. Simmer to Reduce: Bring each juice and sugar mixture to a boil over medium heat. Once boiling, reduce to a medium simmer and let the liquid reduce by approximately two-thirds. This process should take about 30 to 50 minutes, depending on the juice’s natural sugar content and water volume. Keep an eye on it and stir occasionally to prevent burning.
  3. Add Food Colouring: After reduction, if using, add a small blob of food colouring gel to each fruit syrup—green for apple, red for orange, and yellow for pineapple. Cherry syrup typically does not require food colouring. Stir until the colour is evenly incorporated.
  4. Cool the Syrups: Remove the syrups from heat and allow them to cool completely. As they cool, they will thicken slightly, achieving the desired syrup consistency.
  5. Prepare Shaved Ice: Place ice cubes or crushed ice into a food processor and pulse until the ice is finely crushed and fluffy, suitable for snow cones.
  6. Assemble Snow Cones: Spoon the shaved ice into serving cones, bowls, or cups. Drizzle 1 to 2 tablespoons of your preferred fruit syrup over the ice. Serve immediately for a refreshing treat.
