Delight in these irresistible Strawberry Cruffins, a perfect blend of flaky croissant pastry rolled with creamy custard and fresh strawberries. This easy-to-make baked treat combines the buttery layers of croissants with sweet cinnamon sugar and juicy strawberries, making it an ideal breakfast or dessert for any occasion.
Ingredients
For the Cruffins
- 1 tbsp soft butter
- ½ tsp ground cinnamon
- 6 tsp granulated sugar
- 1 pack chilled croissant dough (found with pastry in the chilled section)
- 2 tbsp ready-made custard (small long-life pot)
- 125g strawberries, hulled and very finely sliced
- Icing sugar, to dust
Instructions
- Prepare the muffin tin and cinnamon sugar: Generously butter 6 holes of a large muffin tin. Mix half the ground cinnamon with the sugar, then put a teaspoon of this cinnamon sugar into each muffin hole, rolling it around to coat the inside evenly.
- Prepare the croissant dough: Unroll the croissant dough carefully and cut it into 3 rectangles by keeping 2 croissant triangles stuck together per rectangle. Then, cut each rectangle in half lengthways to create 6 thinner strips.
- Spread custard on the dough: Working with one strip at a time, brush a thin layer of ready-made custard over the dough, leaving a 1cm wide border along the edge nearest you free of custard.
- Add strawberries and cinnamon: Dot the finely sliced strawberries over the custard, allowing some strawberry tips to stick out above the dough edge. Sprinkle a pinch of ground cinnamon over the strawberries for added flavor.
- Roll and seal the dough: Roll the croissant dough tightly from one of the shorter sides, pinching together the dough border to seal the base securely.
- Place in muffin tin: Position the rolled dough, seam side down, into one of the coated muffin holes. Repeat steps 3 to 5 for all strips of dough.
- Bake the cruffins: Preheat the oven to 200°C (fan 180°C, gas mark 6) and bake the cruffins for 15-20 minutes until risen, golden, and crisp on top. If they rise too much during baking, gently push the dough back into the tin to maintain their shape.
- Finish and serve: Once baked, dust the cruffins generously with icing sugar and serve warm or at room temperature.
