Description

This easy no-bake Strawberry Jello Pie combines a creamy strawberry gelatin filling with a chocolate cookie crust, topped with luscious homemade chocolate-dipped strawberries. Perfect for a refreshing, crowd-pleasing dessert without the oven.

Ingredients

Pie Filling

  • 3 ounces strawberry jello (boxed, regular or sugar-free)
  • 1 cup boiling water
  • 1 cup very cold water
  • 8 ounces Cool Whip (or your favorite store brand, thawed)
  • 1 chocolate cookie pie crust (premade)

Chocolate Dipped Strawberries

  • 8 fresh strawberries
  • 1/2 cup chocolate melting chips

Instructions

  1. Prepare Jello Mixture: In a medium-sized bowl, pour the packet of strawberry jello and 1 cup of boiling water into the mix. Whisk thoroughly until all the gelatin granules are completely dissolved.
  2. Add Cold Water: Whisk in 1 cup of very cold water into the dissolved jello mixture to help it begin setting.
  3. Incorporate Cool Whip: Scoop the fully thawed Cool Whip into the jello mixture. Whisk until the mixture is smooth and creamy, which should take about 2 minutes.
  4. Chill Filling: Place the bowl into the refrigerator and chill for 40 minutes, stirring once halfway through (after 20 minutes) to ensure even setting.
  5. Assemble Pie: After chilling, scoop the jello filling into the premade chocolate cookie crust evenly.
  6. Set Pie: Return the pie to the refrigerator and chill for 4 hours until fully set and firm.
  7. Prepare Strawberries: Rinse the strawberries and pat dry carefully with paper towels to ensure the chocolate will adhere properly.
  8. Melt Chocolate: Melt the chocolate melting chips in a microwave-safe bowl in short bursts or use a double boiler until smooth.
  9. Dip Strawberries: Hold each strawberry by its stem and dip it fully into the melted chocolate, swirling to coat. Allow excess chocolate to drip off, then place on a parchment-lined baking sheet.
  10. Set Chocolate: Chill the chocolate-dipped strawberries in the refrigerator until the chocolate is firm.
  11. Garnish and Serve: Before serving, garnish the pie with dollops of whipped topping and arrange the chocolate-dipped strawberries on top for an impressive finish.

Notes

  • Use sugar-free jello for a lower sugar option.
  • Ensure Cool Whip is fully thawed for smooth incorporation.
  • Pat strawberries completely dry before dipping to help chocolate stick better.
  • Chill time is necessary for the pie to set properly; do not skip.
  • Chocolate-dipped strawberries can be made a day ahead and stored in the refrigerator.
