Instructions

  1. Mix the Filling: In a large mixing bowl, combine the crushed pineapple with its juice, instant vanilla pudding mix, and sour cream. Stir until the mixture is fully blended and smooth. If desired, fold in the chopped pecans or walnuts at this stage for added texture and flavor.
  2. Assemble the Pie: Spoon the prepared filling evenly into the graham cracker crust. Use a spatula to smooth out the top, creating an even surface for the toppings.
  3. Add Toppings: Sprinkle the sweetened flaked coconut over the surface of the pie evenly, covering the filling gently.
