Description

This Twix Ice Cream Cake is a delightful and easy-to-make dessert featuring a buttery shortbread cookie crust layered with vanilla ice cream mixed with chopped Twix caramel minis. Topped with rich chocolate and caramel sauces, plus extra Twix pieces for added crunch and caramel goodness, it’s a crowd-pleaser perfect for any occasion.

Ingredients

Crust

  • 5.5 ounces shortbread cookies (Pepperidge Farms Dublin or your favorite brand)
  • 1/4 cup butter (melted)

Ice Cream Layer

  • 5 cups vanilla ice cream (softened)
  • 6.47 ounces TWIX Caramel Minis Candy Bars (chopped and divided; approx. 2/3 for ice cream mixture, 1/3 for topping)

Toppings

  • 1/4 cup chocolate sauce
  • 1/3 cup caramel sauce

Instructions

  1. Prepare the pan: Grease an 8×8-inch baking dish with non-stick spray and set it aside to prevent sticking during assembly.
  2. Make the crust: Place the shortbread cookies into a food processor and pulse until fine crumbs form. Add the melted butter to the crumbs in the processor and pulse until well blended to create a crumbly mixture.
  3. Form the crust: Press the buttery cookie crumb mixture evenly into the bottom of the prepared baking dish. Freeze for 20 minutes to allow the crust to set firmly.
  4. Combine ice cream and Twix: In a large bowl, mix the softened vanilla ice cream with about two-thirds of the chopped Twix Caramel Minis until evenly distributed.
  5. Assemble the ice cream layer: Spread the ice cream and Twix mixture evenly over the frozen crust in the baking dish. Cover tightly with plastic wrap or foil to protect from freezer burn.
  6. Freeze the cake: Place the assembled cake in the freezer for at least 6 hours, or preferably overnight, until it is completely firm and set.
  7. Add toppings and serve: Once the cake is fully frozen, drizzle the chocolate sauce and caramel sauce evenly over the top. Sprinkle the remaining chopped Twix pieces on the surface for extra texture and visual appeal. Slice into squares and serve immediately.

Notes

  • For best results, allow the cake to freeze overnight to ensure it scoops cleanly.
  • The softened ice cream helps mix the Twix pieces evenly; do not let it melt completely.
  • You can substitute shortbread cookies with graham crackers or digestive biscuits if preferred.
  • Use good-quality chocolate and caramel sauce for richer flavor.
  • Store leftovers tightly covered in the freezer and consume within 1 week for best freshness.
