These White Chocolate Cherry Cups are delightful mini treats combining smooth white chocolate, crunchy biscuit crumbs, and sweet cherry pie filling. Perfectly layered in bite-sized portions, they are easy to make and ideal for festive occasions or as a fancy dessert snack.
Ingredients
Chocolate Layer
- 250 g white chocolate (broken into chunks)
Biscuit Layer
- 3 digestive biscuits or graham crackers, crushed
Cherry Filling
- 1/2 of a 400 g (14 oz) tin of cherry pie filling
Instructions
- Prepare the Tin and Melt Chocolate: Line a 12-hole petit fours (mini muffin) tin with mini cake liners. Melt half of the white chocolate either in the microwave using 30-second bursts, stirring between each to prevent burning, or melt over a bain-marie until smooth.
- Create Chocolate Shells: Spoon a teaspoon of melted white chocolate into each lined cup. Place another cake liner inside each and gently press down to push the chocolate up the sides, covering evenly to the top. Add more chocolate if needed to ensure full side coverage.
- Freeze the Shells: Place the tin in the freezer for 20 minutes to allow the chocolate shells to harden.
- Remove Inner Liners: Carefully peel off the inner liners from each chocolate shell quickly to avoid melting the chocolate.
- Add Filling Layers: Spoon half a teaspoon of crushed biscuit crumbs into each chocolate shell, then top with a teaspoon of cherry pie filling. Return the tin to the freezer for 10 minutes to set.
- Seal with Remaining Chocolate: Melt the remaining white chocolate. Drizzle it over the cherry filling to fully cover and seal the cups, being careful not to let the chocolate run down the sides. Freeze for another 10 minutes.
- Finish and Store: Remove from the freezer and carefully peel off the outer liners. Store the finished White Chocolate Cherry Cups in the refrigerator until ready to serve.
